Electrical Panels, Breakers, and Phase... OH MY!

I've read plenty of posts regarding the concept of keeping power for audio gear that will be interconnected on the same phase. I understand how to do that but I do not understand *why* to do that.
Any insight or explanation would be tremendously helpful.
Also, and this is just a curious wondering since we have a fresh panel to work with, if you have a panel with everything installed and need to move a breaker to the other phase how do you do that since, usually, the wiring inside a panel is cut to length so that it enters the box and terminates at the breaker with no extra length? Can you just 'pigtail' extention wires?
